As part of an exchange between Canada’s Food Island – Prince Edward Island and Alberta Chefs, we packed our bags with SABOR Restaurant Group’s Christian Mena and Chef Lino Oliveira to embark on a three-day culinary adventure to Charlottetown to experience tours of PEI’s finest exports, meet the people behind products and ingredients served proudly at SABOR Restaurant, BODEGA Tapas Bar and ATRIUM at Sabor.
What an adventure it was! We stopped in at Atlantic Aqua Farms to see how 80,000 lbs of mussels are processed every day, Raspberry Point Oysters (where our favourite Lucky Limes are from!), a PEI Potato and Cattle farm (we saw FIVE MILLION POUNDS OF POTATOES!), COWS Creamery (makers of the closest thing to French butter we’ve ever tasted), Deep Roots Distillery (for minerality and unique flavour – spirits are filtered through oyster shells), Maritime Madness (find their hot sauces at the raw bar at SABOR) and the makers of the most delicious chocolate-covered potato chips – Anne’s of Green Gables Chocolates.
The visit culminated in a collaboration with Chef Adam Loo of Ada Culinary Studio and Chef Lino to share the flavours of Spain and Portugal using PEI’s finest ingredients.
